Popsicles:
14 oz Coconut Milk

2 tsp mint extract

Drizzle:
1 tbsp Organic Coconut Oil
1/3 cup dark chocolate chips, vegan

Instructions:

Place all the popsicle ingredients into your blender and pulse until the mixture comes together. Divide the mixture among the popsicle molds and place a wooden stick in each compartment. Freeze for at least 3-4 hours. Before serving the popsicles, place the chocolate chips and coconut oil in a microwave-safe dish and melt in 30 seconds intervals until completely melted. Drizzle the melted chocolate over the frozen popsicles.

Ingredients:

1/2 cup raw pepitas
1/2 cup raw sunflower seeds
1/2 cup raw pistachios
1 T maca powder
1 T chia seeds
10 medjool dates (pits removed)
1/2 teaspoon sea salt
2-3 tablespoon water

In a food processor, grind up the pistachios, chia seeds, sunflower seeds, pepitas, sea salt and maca powder to a coarse consistency. Then add in the dates and continue to pulse. Lastly, add in the water, one tablespoon at a time until a dough starts to form. Roll into balls and place in the fridge to firm up. It should only take a minute or two.

Ingredients:

1 cup unsweetened plant-based milk I used homemade cashew milk
1 tsp matcha powder

Combine the milk, matcha and moringa powder in a small saucepan. Bring to a low simmer over medium heat, whisking a few times. Once the milk has thickened a little and is warm, gently transfer to a blender. Add the coconut oil and honey and blend until smooth and creamy, then pour into a mug and serve immediately.

Ingredients:

1 cup mixed frozen berries*
4 ice cubes
Splashes of light coconut milk (enough to get blender moving)
1 tablespoon almond butter
A handful of spinach
Optional: 1 teaspoon aronia berry powder
Optional: maple syrup or sweetener of your choice, to taste

Toppings:
hemp seeds
coconut flakes
blueberries
freeze dried strawberries

Place the frozen berries, ice cubes, coconut milk, almond butter and spinach in a blender. Add aronia berry powder, if using. Blend until smooth, adding additional coconut milk as needed. (As little as necessary so your smoothie will be thick). Taste and add maple syrup or sweetener of choice, if desired. Blend again. Pour into two bowls and top with hemp seeds, coconut flakes, blueberries, and dried strawberries.

For our fellow Shoppers who are intolerant to gluten, cassava flour is a great replacement for bread and other baked products. This root vegetable is calorie-rich and is absolutely gluten-, nut- and grain-free. Its taste most resembles wheat flour, although its soft powdery texture makes it a great option for baking and cooking.

Try this paleo cassava pancake recipe by All Purpose Flour Child:

Ingredients:
2 c cassava flour (I use this one!)
1 1/2 t baking powder
1/2 t baking soda
pinch of Himalayan pink salt
2 pasture-raised eggs, room temperature
1 c full-fat coconut milk (or any kind of milk you prefer)
1 T fresh lemon juice
1 t vanilla extract
2 T honey
2 T coconut oil, melted and cooled slightly (you could also use butter or ghee if you prefer) plus more for greasing griddl

In a glass measuring cup, whisk together the coconut milk and lemon juice and set aside. In a medium bowl, whisk together the cassava flour, baking soda, baking powder, and salt and set aside. In a large bowl, whisk together the coconut oil and honey until combined. Whisk in the eggs, vanilla, and coconut milk mixture until combined. Add the dry mixture into the wet and whisk to combine.

Heat a large skillet or griddle over medium-low heat. When pan is heated, add a little coconut oil to grease the surface of the skillet. Using a 1/4 cup measuring cup, scoop the batter and pour about 3-4 pancakes onto skillet (depending on how large your pan is) and cook for about 3 minutes, until bubbles begin to form on top of the pancakes. Take a peak at the bottom of the pancakes and flip when golden-brown. Cook for another 2-3 minutes. Repeat with the rest of the batter, adding more coconut oil to the skillet as needed. Serve immediately. If you want to make all the pancakes at once before you serve, you can keep them warm in a 200 F oven on a baking skeet until ready to serve.
